Farmer Focus™ Grilled Rosemary Chicken Salad

The ultimate favorite summer salad!

Ingredients:

  • 2 large chicken breasts from Shenandoah Valley Organic, about 1 pound
  • Olive oil
  • 1 sprig of rosemary, finely chopped
  • Salt and pepper
  • Chopped romaine leaves
  • Grape tomatoes, halved
  • Bacon
  • Soft boiled eggs
  • Avocado slices
  • Avocado green goddess yogurt dressing

Instructions:

  1. Heat grill on high. While the grill is heating up, drizzle olive oil on chicken breasts then evenly sprinkle finely chopped rosemary, salt, and pepper on chicken.
  2. Grill chicken on grill until thoroughly cooked through then place onto a plate or cutting board to let cool for 15 minutes.
  3. In the meantime, evenly divide up romaine leaves then top with tomatoes, bacon, soft boiled eggs, and avocado slices.
  4. Slice up the chicken and evenly divide amongst salads then drizzle salad with your favorite dressing or this creamy Avocado green goddess yogurt dressing.
